For me Pasta is comfort food and so easy to make. Love to experiment with lots of flavour with this. In this recipe I tried to marry my favourite flavours. Before you think how can it work, give it a go first…. you wont be disappointed. Lentils are good source of protein, when grouped together with Pasta and veg its a complete meal in a bowl….less washing, great RIGHT!

Ingredients:
- 1 large carrot, diced
- 1 pepper chopped
- Some kale(I used frozen)
- 1 tin of tomatoes
- 1 tbsp light soy sauce
- 125 g dried puyi lentils, washed and rinsed
- Vegetable/chicken stock
- 1 tbsp oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
Method:
- Put the lentils and stock in a large saucepan over a high heat and bring to the boil. Reduce the heat to low, cover and simmer for 25 minutes or until the lentils are just cooked
- Meanwhile, put oil in pan. saute onion, garlic until translucent, then add carrot, pepper and kale cover and cook for 5-8 minutes or until softened, stirring occasionally. Add the tomatoes, cover, reduce the heat to low and simmer for 15 minutes.
- Stir the lentils into the vegetables. season.
- Add pasta and cook for 5 mins with lid on. Its ready enjoy!
