Mixed veg rice, this is one of my favourite dish to make, when I want to eat something light but healthy at the same time. This dish is perfect for those occasions.

Ingredients:
- 1/2 cup of rice
- half a tin of chickpeas( mix of black chickpeas and garbanzo beans)
- 1/2 spring beans
- 1/2 peppers
- 1/2 onion
- 1 carrot
- 1/2 cup broccoli
- a clove of garlic
- 1 green chilli
Method:
- Put the rice for boil in a pan with plenty of water, 3 times more water than rice
- In a pan add some oil or oil spray, add first chopped garlic, when turns light brown add onions, chilli and cook until onions are golden
- add all the veg and chickpeas and cook on medium heat until they are cooked and crispy
- add salt mix well
- drain rice let them sit in colander until all the water is out, then add rice to the veg mix cook for another 2 minutes, switch off the heat and leave it for 5 minutes with lid on..

- you can also use frozen for quick lunch or dinner meals
- its yummy on its own but can also go well with raita (check out the recipe, just type raita in seacrh box)
