Vegetable Rice

Mixed veg rice, this is one of my favourite dish to make, when I want to eat something light but healthy at the same time. This dish is perfect for those occasions.

Ingredients:

  • 1/2 cup of rice
  • half a tin of chickpeas( mix of black chickpeas and garbanzo beans)
  • 1/2 spring beans
  • 1/2 peppers
  • 1/2 onion
  • 1 carrot
  • 1/2 cup broccoli
  • a clove of garlic
  • 1 green chilli

Method:

  • Put the rice for boil in a pan with plenty of water, 3 times more water than rice
  • In a pan add some oil or oil spray, add first chopped garlic, when turns light brown add onions, chilli and cook until onions are golden
  • add all the veg and chickpeas and cook on medium heat until they are cooked and crispy
  • add salt mix well
  • drain rice let them sit in colander until all the water is out, then add rice to the veg mix cook for another 2 minutes, switch off the heat and leave it for 5 minutes with lid on..

Notes:

  • you can also use frozen for quick lunch or dinner meals
