Breakfast is the important meal of the day, I never skip breakfast… only because I am always hungry in the morning lol. What a healthy start of the day with courgette and sweet potato fritters. Yummy and healthy indeed. Loved having them for breakfast something different than usual brekie 😁.
Ingredients:
- 1 courgette
- 1 medium sweet potatoes
- 1 egg
- 1 tsp cumin powder
- 1/2 tsp pepper
Method:
- boil sweet potato or cook in microwave
- grate courgette, add some salt and leave to rest for 5-10 mins. Squeeze the excess water
- mix together courgette, sweet potato, egg, salt, cumin and pepper
- cook them on pan as a pancake with little oil or fry light.
