Honey and Lemon Chicken Roast with chilli Chips

This is my all time favourite, quick marinate to make for chicken. Doesnt need too many fancy stuff, few things from your cupboard is needed to make this delicious marinate.

I have made chilli chips to go with chicken, for extra spice.

Ingredients:

  • 500g of Chicken breast/thighs
  • for marination:
  • Juice of a lemon
  • 1 tbsp Honey
  • 1/2 tbsp ginger paste
  • 1 tsp crushed pepper
  • salt to taste
  • for chips you need:
  • 3-4 medium potatoes, cut into strips with skin on
  • 1 tsp peprika
  • salt to taste

Method:

  • Take the visible fat off the chicken, prick chicken with fork all around
  • in a separate bowl add all the marinate ingredients and mix
  • add chicken, coat the chicken evenly with the marination
  • leave to rest for atleast 30mins
  • Roast in air fryer for 20 mins if using breast or 30 mins if using thighs on 180’c, turning over half way. Can be cooked in oven timing will vary
  • for chips, soak cut potatoes in boiling water for 15 mins, then rinse and dry with kitchen towel
  • spray some cooking oil, add salt and paprika and coat evenly, bake for 180’c for 10 mins (air fryer)
