Now it sounds strange but it works, sweet potatoes can be used in sweet dishes. They are naturally sweet so kind a make sense. Best thing about it that you can’t taste sweet potato when cooked this way. I like eating sweet potatoes now and then, a good substitute for grainy carbs. Some days I like to avoid eating any grains, like today…so thought to make these pancakes for a change.
I have made sweet potato brownie before you check the recipe here, it was very delicious, couldn’t even taste the sweet potato.
These are very easy simple pancakes, only need couple of things, they are yummy, healthy and gluten free. Paired with eggs and berries and perfect breakfast is ready. Doesn’t that sound good, if so then check out the recipe below x

Ingredients:
Makes about 5-6 pancakes
- 1 sweet potato, cooked and cooled
- 1 egg
- 1 tbsp sugar of your choice
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tbsp of milk of your choice
Method:
- Mix all the ingredients in a food processor
- Pour over on a lightly sprayed oil pan and cook as usual pancake and enjoy 😊
