Coco Fudge Rolls

Have you had fig rolls? I have, I loved them until I realise that they are very high in calories and sugar lol. When I was making these rolls, fig rolls weren’t in my thoughts, it was my eldest son who walked in and looked at what I was doing and said, are you making fig rolls lol, bam just occurred then that it is actually something similar to fig rolls but in fact it has dates and cocoa in them and these are much healthier.

These fudge rolls are so moorish, I ate quite a few whilst making them, they are quite small though. You can make them in bigger discs if you want. There are two parts to it, outer layer is ground almond and inner layer is dates and cocoa. Dates and cocoa combined makes a fudge texture and taste absolutely delicious. I have made them discs but it can be shape in squares or rounds.

I have enjoyed making and eating them, my weekend is sorted for snacks 😉 actually I am happy to achieve that as been busy sorting out school uniform for kids, buying, returning (not my favourite part) and washing for last few days. Also my office will be ready for return, although I won’t be going to office as much I did before convid19, and will continue to working from home until things are more settled.

This recipes is a invention of my chocolate craving hehe, it’s easy, simple, healthy and of course delicious, like all my recipes. I will be using dates more in my sweet treats so keep an eye on the page xx

Ingredients:

30 g mejdoot dates
2 tbsp of cocoa powder
1 tbsp maple syrup
30 g ground almonds
1 tbsp almond butter

Method:

In a blender, blend dates, cocoa and maple syrup, shape them like sausages
In a separate bowl mix ground almond and almond butter, mix well.
take half of the almond mix and fleetness it’s down, on one end place dates mix and roll in almond paste. So you have almond layer on top of dates layer
Then cut them in pieces or leave it as it is
