Easy Slow Cooker Mince and Veg Curry

This is how I make most of my sauces, whether it’s a pasta sauce or curry. It’s simpler, quicker and oil free, but full of flavour developed by slow cooking.

Add everything to slow cooker and let it do the job meanwhile you get on with your other things. You can add anything to this sauce vegetables, chickpeas or protein it works really well with all.

It’s so easy to make, worth making some extra to freeze or store in fridge to use later in the week, good for those evenings when you simply don’t have enough time to cook.

Ingredients:

  • 1 onion
  • 2-3 cloves of garlic
  • 1/2 tbsp of ginger
  • 2-3 green chillis
  • 200g of passata
  • 1 tbsp of garam masala or meat masala
  • 1 tsp cumin powder
  • 200g mince
  • 1/4 cup butternut squash
  • 1/4 okra
  • Salt to tatse
  • Coriander to serve

Method:

  • Mince onion, garlic, ginger and chilli in food processor
  • In slow cooker add all the ingredients other than okra and squash
  • Set the slower cooker for 5-6 hrs
  • After 3 hrs add butternut squash and okra cook for another 30mins- 1 hour until veg are done
  • Serve with sprinkled coriander and rice or flat bread
  • And enjoy!
