It’s not too early to share a pumpkin recipe, is it? excuse me if it is. Taken inspiration from pumpkin pie and turned it into pancakes, oh nice right? All those spices and flavour makes Sept Saturday little special.

It’s totally guilt free, vegetables in breakfast what else can be better, hehe. You can make it sugar free by adding sweetener instead of sugar. It’s also gluten free so it hits all the spots. You can add a tbsp or two flour to make them little firmer too.

Ingredients:(makes 6)
- 300g pumpkin puree
- 1 egg
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 2 tbsp milk
- 2 tbsp sugar of your choice or sweetener if you want it sugar free
- Pinch of salt
Method:
- Mix all the ingredients in a food processor, if the mix is too think add 1 tbsp of milk
- Spread a spoon full on a heated oiled pan, add some pumpkin seeds, cook for 4-5 mins then flip and cook for 3-4 mins, and enjoy x


The pumpkin seeds great value to the pancakes because they contain a healthy mix of minerals, antioxidants, omega-6 and omega-3 fatty acids, fibers, vitamins, and phytosterols.
