This coconut curry is easy to make but very flavoursome, with spices from south of india, it gives a unique flavour to the dish. The one you must try.

Ingredients:(1 serving)
- 1 tbsp ginger garlic paste
- 1-2 green chillis chopped
- 5-6 curry leaves
- 1 onion, finely chopped in food processor
- 1/4 tin of tomatoes
- 3/4 tsp turmeric
- Salt to taste
- 1 tsp red chilli powder
- 70-80ml of coconut milk
- Fillet of salmon or fish of your choice
Method:
- Spray or add oil into lidded pan on a medium heat. When it’s hot, add the curry leaves, then onions, and stir every now and then for 8 to 10 minutes, until the onions are pale gold
- Add ginger garlic paste and chillies cook until raw aroma is gone and they are slightly brown, add tomatoes and cook for another 5-7 mins
- Add coconut milk diluted in little water, depends how runny you want your curry to be, when mix starts to bubble, add fish and cook for another few minutes 3-4 mins
- Serve hot with squeeze of lemon with rice
