Another easy and quick recipe for lunch or dinner. Pasta is my all time favourite, when it comes to making easy and quick lunchs. You can use frozen veg or tinned stuff for a quick meal.

I have tried lots of variations of pasta sauces, you can find recipes in the recipe section or search “pasta”. I have had Wholemeal and white pasta both on many occasions, I can easily eat both without complaining hehe.
From shop bought to homemade sauces, it’s never boring to have pasta, you can easily make it interesting by adding vegetables even frozen ones for quick meals, or add some spices and even add left overs. I keep some boiled in fridge for the times I might struggle with time and it saves me from eating whatever lol.

Ingredients:(2 servings)
- Pasta
- Half a tin of mixed beans
- Chopped veg, I used mangetoot, kale, tomatoes
- 40g cheddar cheese
- 40ml milk
- 1 garlic clove
- 1 red onion
- Salt to taste
Method:
- Boil pasta as per packet instructions
- Add or spray oil in a pan, sauté onion and garlic until translucent
- Add chopped vegs, sauté for 3-4 mins, then add beans cook for another 2-3mins
- Drain pasta, add back in same pan it was boiled, add milk, let it warm up
- Turn off the heat and add grated cheese mix well
- Add salt and pepper to taste
- Enjoy!
Note:
Have a sprinkle of chilli flakes and black pepper on top, for that extra flavour.
