Lemon and blueberries goes really well together, do you agree….and if it’s gluten free, dairy free and no refined sugar cake, it’s all mine hehe. These cakes are healthy, tasty and guilt free. Perfect for those afternoon cravings or after dinner sweet satisfactions.

I love baking, this is something I have learned on my own by experimenting and following lots of online recipes. Now I don’t really follow any recipe most of the times I just go with my instinct lol yes I do follow proper recipes if I am baking a special cake or baking for special occasions, don’t want to risk that lol
I am not a measurement precision kind of person either, only measure things when I am making them first few times hehe. But it always turn out well and yummy. My family loves my bakes and this batch of lemon and blueberries cakes are gone already just in one night.

I have not bought a cake from shops for a very long time. I like to make my own cakes and bakes, just because I can control what goes in them, control the sugar and adjust the flavours according to my family likings.
Back to this recipe, it’s a great combination of nuttiness of tahini, sharpness of lemon and blueberries and sprinkle crispy sugar on top what not to like about these cakes. guaranteed to satisfy your cake cravings. And sprinkle of sugar on the top adds a extra level. Very easy recipe mix all the ingredients put it in the oven and bake. You can add other berries instead of blueberries will works absolutely fine.

Ingredients: (makes 4)
- 60g almond flour or any other flour of your choice
- 2 tbsp tahini paste/almond butter
- 4 tbsp Gf self raising flour
- 4 tbsp agave/maple syrup
- 1 egg
- 1/2 tsp baking powder
- Pinch of salt
- Juice and zest of a lemon
- Hand full blueberries
- Brown sugar to sprinkle on top (optional)
Method:
- Heat the oven at 180’c
- Mix all the ingredients apart from blueberries
- Pour over small cake tins, add blueberries sprinkle some sugar
- bake for 8-10mins
- Enjoy hot or cold 😍
