No bake Coconut and Almond Tart

Easy recipe for non bake tart, base is made of almonds and filling with cashew and coconut. All plant based, gluten free and dairy free. A very healthy and delicious treat.

It’s rich it’s creamy it’s a pudding like and it’s healthy, that sounds good right. No baking and cooking required even better lol. Ready in no time and it’s very delicious of course.

You can make it in advance for gatherings or just make it for yourself doesn’t take long at all. Only need 6 ingredients but you get ultimate pudding like tart.

I have left it in the fridge to firm up because I had time but it can be kept in freezer for quick set. Great with afternoon tea or after dinner, I ensure you it will be a delight.

Ingredients: ( makes 2)

  • For base
  • 70g ground almond
  • 2 tbsp agave or maple syrup
  • For filling
  • 30g cashews, soaked in water for atleast 3-4 hours
  • 2 tbsp almond butter
  • 2 tbsp agave or maple syrup
  • 1 tsp cardamom powder
  • 1/2 tsp powder Gelatine(optional)
  • Mango slices from tin (optional)
  • 2 tbsp desiccated coconut

Method:

  • For base mix almond and syrup, spread it evening around tart moulds or silicon mould of your choice
  • for base mix all the ingredients and spread evenly on top of the base
  • Cover with cling film and leave it to chill in the fridge for 1 hr atleast or freeze for quick set
  • Top with mango slices and syrup and enjoy x
