Oats vanilla cake, moist, soft and very yummy, perfect with a cup of tea or coffee may be in afternoon or after dinner. How about add some strawberry jam with whipped cream which converts a humble vanilla cake into dessert. Or may be add some fresh fruit for freshness and tangyness. I had it with my afternoon tea with reduced sugar jam and whipped lactose free cream, it was delightful. What’s your favourite combination to try with vanilla cake?


As much as I love making non bake desserts and sweets, I love baking more than anything, always been my comfort zone. Now that Great British Bake Off is on, I can’t help myself from baking and experimenting. I am big fan of the show.
I always baked cakes and sweets at home hardly buy them from shop. I love baking for family and friends, they are always received well. Especially my family loves my cakes and usually they are gone in a day or two ..lol


Cake mix is easy and simple to make, have 2 bowls one for wet ingredients and one for dry, then add dry ingredients into wet and do not over mix. Once it’s in the oven it will take about 25-30 mins, so after 20 mins check it, if it’s bobbly in the middle leave for another few minutes. It’s important to keep good eye on cake at this stage as it can go from soft moist to dry in few seconds. If unsure if its cooked all through, check with skewer or fork, insert it in the middle and if it comes out clean then it’s done. Take it off the oven, take it out of the tin and cool it on a cooling rack.

Ingredients:
- 80g oats/self raising flour
- 1 large egg
- 80g caster/coconut sugar
- 80g almond/coconut/regular butter
- 1 tbsp vanilla essence
- 1 tsp baking powder
- Pinch of salt
- 2 tbsp of milk
Method:
- Preheat the oven at 175’c
- Mix butter and sugar until it’s light and fluffy
- Add egg, add vanilla and mix
- Add flour, baking powder, salt and mix with spoon until mixture is smooth and lump free, do no over mix
- Pour over 18×10 cm loaf tin lined and buttered
- Bake at 175’c for 25-30 mins until skewer inserted comes out clean. It should bounce back when touched on the top for that soft and moist texture
- Take out the cake let it cool completely before slicing
- Server with tea coffee or if you feel bit more excited add little strawberry jam (I sued reduced sugar one) and cream (lactose free) for that extra deliciousness
