Instant Almond Pistachio Squares

Layers of ground almonds and pistachios, a delicious and quick sweet treat, with all the goodness but none the guilt. Soft and silky texture perfect for indulgence. Only few ingredients needed to make these and ready in no time. Perfect for celebrations and parties.

Also know as Barfi in India, made with condensed milk and milk powder, always loved eating it, one of my favourites. I remember my dad will buy barfi from shop especially for me, lovely memories. However for some reason I have developed intolerance to lactose so can’t have all those yummy things made by milk, although you get lactose free options but I haven’t yet them, I have opted for making my own instead lol.

These are very easy to make, like most of my recipes, less work and big impact and they go quick too lol. I should start making big batches as although I have made quite a few sweets still there is only few pieces left of each one. They are not very sweet so doesn’t feel sickly after eating few but they are rich and creamy guarantee too satisfying sweet cravings. Check the recipe below to see if you like it.

Ingredients: (makes 8)

  • For Almond base
  • 80g ground Almonds
  • 2 tbsp milk powder/or any sub
  • 3 tbsp almond butter
  • 3 tbsp maple syrup
  • 1 tsp cardamom powder
  • For pistachio layer
  • 80g unsalted pistachios
  • 1 tbsp of maple syrup
  • 1/2 tsp vanilla

Method:

  • Mix all the ingredients of almond base, put aside for later
  • Mix pistachios layer ingredients in a blender and blend to a fine paste
  • Take a lined tray put almond mix, spread evenly and press
  • Add pistachios layer on top of almond base, spread evenly and press
  • Refrigerate for atleast an hour before slicing
  • Enjoy!
