Coconut Protein Slices

Desiccated coconut with vanilla protein mixed together to make these delicious slices, which are healthy and taste like sweets and quick to make.

I have been experimenting a lot with flavours and trying to make things easier for myself and also trying to make things which are healthier, weight friendly and doesn’t have side effects of eating…lol. I have grown towards instant sweets or mithai’s, although by far the original mithai is bestest and it’s ok to eat it now and then. But I also believe by swapping couple of ingredients around you can still get the flavour with less harm to the body.

Also mums like me who are busy with work, kids and home, cannot spare time for time consuming recipes, I will hate to spend time in the kitchen more than I need to, hence I prefer quick and simple recipes.

This week is mostly dedicated to sweets on my blog, as It’s Diwali week, I have tried to make different types of sweets, to make this Diwali a little sweeter, although the circumstances are not very pleasant at the moment due to COVID-19. I look forward to spending time with my family, me and my boys are busy making divas, and decorations.

The festive recipes I have shared already are for Gachak(Peanut Brittle), Besan Barfi (chickpea flour shortbread), samosa wraps, tamarind and chilli rice.

Ingredients: (makes 12 slices)

  • 1 cup desiccated coconut
  • 1/4 cup coconut oil
  • 2-3 tbsp sugar
  • 1 cup vanilla protein powder

Method:

  • In a mixer blend coconut and sugar yo a fine consistency
  • Add the mix in a bowl, add melted oil, protein powder, mix well
  • In a lined tray pour over the mix, spread evenly whilst pressing, cut into slices
  • Let it set in room temperature for 30 mins
