Potatoes and Aubergine Burrito

Burritos with a difference, filled with aubergine and potatoes bhaji or curry as its known in UK. aubergines are very nutritious and has lots of health benefits only they are not widely used.

This recipe is easy to make, taste great. Also vary versatile, can be served with wraps as a burritos with naan, flat bread or chapatti.

You can make it more spicy by adding more chilli red or green. I have added little chaat masala in the end, just to give it little tangy ness. It’s simply delicious and filling. A healthy and filling Lunch or dinner option.

Ingredients: serve 2-3

  • One onion, sliced
  • Three cloves of garlic. Chopped finely
  • Two tomatoes, cut into small pieces or use half tin of tomatoes
  • One big potato, cut like chunky chips
  • 2-3 green chillis, sliced finely
  • 3-4 small aubergines, cut into think long pieces
  • 1 tbsp coriander powder
  • Salt to taste
  • 1 tsp turmeric powder
  • Juice of half lemon or 1/2 tbsp chaat masala (optional)

Method:

  • Heat some oil in a pan
  • Add onion and garlic, cook until golden, add tomatoes and chillies and cook until tomatoes are soft and oil separated
  • Add salt, turmeric and coriander powder, cook for a min
  • Add aubergine and potatoes, mix well. Leave it to cook on low heat for about 20 mins, stirring occasionally
  • Add lemon juice or chaat masala on the end and cook for another 2-3 mins, if adding lemon juice might have to cook for bit longer.
  • Wrap mix in a wrap and enjoy the barrito with mayo or some kebab sauce.
