Ginger Bread Cookies 🍪

Gingerbread reminds of Christmas, festivity and winters, what a good way of including ginger as a treat, warmth and happiness. This is first time I attempted to make gingerbread cookies, it’s not fully traditional recipe but modified to my dietary limitations. These cookies turned out perfectly delicious. Great with cup of tea.

I always loved people making gingerbread house and their amazing piping skills, inspired me always. Although I am not ready for that level of piping yet, I still enjoyed making and eating these cookies..lol

Once you have these cookies made there are many possibilities to make them even special, decorating them with colourful icing, sandwiching them with chocolate ganache, or even use them in a dessert.

Ingredients: (makes 8)

  • 30g ground almonds
  • 20g self raising flour
  • 1 flaxseed egg ( 1 tbsp ground flaxseed, mixed in 3 tbsp water)
  • 20g brown sugar
  • 1 tbsp coconut oil
  • 1 tbsp agave syrup
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp cinnamon powder
  • 1 tsp mixed spices

Method:

  • Mix everything in a bowl
  • Dough will feel little hard to begin with but it gets soft once you start working with it, that’s what I found. You can either rest the dough in fridge for 30mins so that it’s easier to work with or you can skip that
  • Roll out dough, cut in to shapes
  • Bake in pre heated oven for 8-10 mins on 180’c until they are little brown on the edges and feel firm to touch
  • Let them cool on a cooling rack and enjoy x
