Festive fruit cake

When I say fruit I mean dried or candied fruit, like sultanas, cranberries and apricots, the ones I used in this cake. So delicious, festive and healthy (kind of…lol) hey it’s end of the year, so little indulgent is allowed…shhh!

I haven’t made fruit cake before although always wanted to make one. This is simplified recipe, just a made a small one but double up the recipe to make a bigger cake.

Cake are my weakness, that too home made ones. I love baking and experimenting with it. This recipe is mine inspired by Christmas cake recipes. Not gone to the length of soaking the fruits in alcohol for few days before cooking, but modified a little to make it instant.

I have also attempted to make decorations myself with icing without the cutters, they turned out not bad too be honest.

As all my sweet recipes this is not very sickly sweet cake however icing on top does make it little sweeter, which you can skip if you don’t prefer. Although a small slice of this cake will be fine…after all it’s Christmas.

Ingredients:

  • 2 medium eggs
  • 100g sugar
  • 50g coconut oil
  • 120g self raising
  • 1 tsp baking powder
  • 10g each of dried cranberries, apricots, sultanas
  • 30ml spiced rum
  • 1 teaspoon mixed spice
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • For icing
  • 100g icing sugar
  • 1 1/2 tbsp water

Method:

  • First beat oil and sugar until fluffy
  • Add eggs beat till mixture is little in texture, I used hand mixer for beating
  • Add spiced rum
  • Fold flour, baking powder, spices in the wet mix
  • Add little bit of flour to dried fruit, make sure fruits are well coated
  • Add fruits to mix and mix gently
  • Pour on to a 12 cm tin bake for 40-45 mins on 170’c until skewer inserted comes out clean
  • Let it cook completely
  • For icing add 1 tbsp of water first to icing sugar, then keep adding little drops until you get the required consistency
  • Cut out the dome of the cake or keep it if you prefer and spread icing on the top

Notes:

  • You can add milk instead if you are not keen on alcohol
  • Even add some chopped up almonds, walnuts or pecans
  • Or a juice and zest of orange will go well too
  • I avoided these things due to dietary/allergies needs of the family
