Weetabix Waffle Pudding

Weetabix pudding yes that’s what it is, a humble breakfast turned into yumm pudding. If you looking for something healthy nutritious and delicious for that late night cravings or just want something sweet but without the guilt this is what you need.

I like to experiment with recipes and food. This recipe is the birth of wanting to eat something nice and puddingy but without going to sabotage my weight.

This is just the right thing, weetabix and dates waffles taste like pudding, soft and fudgy waffles and when served with vanilla ice cream and drizzle of chocolate on a warm waffle…emmm…yummmy heaven.

Ingredients:

  • 2 weetabix biscuits
  • 1 egg
  • 2-3 mejdool dates
  • 2-3 sweetener tablets or sweetener
  • 3 tbsp milk
  • 2 tbsp cocoa powder
  • 1/2 tsp coffee mixed with 1/2 tbsp of water
  • 1 tbsp tahini paste
  • 1/2 tsp baking powder

Method:

  • Add everything in a food processor and pulse until mixture is combined
  • Spray oil waffle silicon tray and spread the mix evenly. Or use waffle iron if you prefer
  • Cook for 8-10mins on 180’c
  • They will be soft to tough and spring back
