One of my favourite, always loved eating it and reminds me of Punjab. Although it’s not easy to get good saag here in UK, I have over the years come up with my own way of creating that similar taste of saag. This recipe is the closest we can get to that authentic saag.

Ingredients:
- 500g spinach, I used frozen
- 150g broccoli, frozen or fresh
- 100g greens , frozen or fresh
- 3 tbsp ginger chopped
- 1 tbsp garlic chopped
- 2 medium onions, sliced
- 5-6 green chillis
- 2 tbsp cornmeal flour
- Salt to taste
Method:
- In a pressure cooker or slow cooker or in a pan add spinach, broccoli and greens with 2-3 chopped green chillis , 2 tbsp ginger, some salt and add some water just half a cup, let it boil then cover and cook for 1 hr on low heat
- In a separate pan, heat some oil, add onions cook until they are golden then add rest of the ginger garlic and chillis and cook until mix is cooked more than golden brown and slightly crispy, add salt
- Now using food processor or hand blender blend spinach to fine paste or corse, what ever your preference are, add cornmeal flour, mix well and cook for 5 mins
- Add onion mix to saag and cook for another 5 mins
- Serve hot and enjoy x
