

Ingredients: (1 serving)
- 4-5 tbsp bean sprouts
- 3 runner beans, sliced thinly
- 2 small tomatoes, cut in fours
- 2 green chillies
- 1/2 red onion, chopped
- Salt to taste
- 1 jacket potato, I used frozen one
- 1 tbsp lemon juice
- Cheese (optional)
Method:
- Heat some oil in a pan, add onions fry till translucent
- Add vegs, cook until tender
- Add be a sprout lemon juice, cook for 2-3 mins
- Add salt
- Spread the mix on to heated jacked potato, then sprinkle some cheese and enjoy
