Jacket Potatoes with Bean Sprouts

Ingredients: (1 serving)

  • 4-5 tbsp bean sprouts
  • 3 runner beans, sliced thinly
  • 2 small tomatoes, cut in fours
  • 2 green chillies
  • 1/2 red onion, chopped
  • Salt to taste
  • 1 jacket potato, I used frozen one
  • 1 tbsp lemon juice
  • Cheese (optional)

Method:

  • Heat some oil in a pan, add onions fry till translucent
  • Add vegs, cook until tender
  • Add be a sprout lemon juice, cook for 2-3 mins
  • Add salt
  • Spread the mix on to heated jacked potato, then sprinkle some cheese and enjoy
