Tofu Dip

Easy dip, including all vegetarian and plant based ingredients:

Ingredients: (serve 2)

  • 40g plain firm tofu
  • 200g passata
  • 1 garlic clove
  • Handful cashews, soaked in hot water for atleast 30mins
  • Salt pepper to taste
  • 1/2 tsp ground onion and garlic

Method:

  • Put passata and garlic in a pan, cook on low heat for 5 mins add tofu(excess water squeezed) drained cashews and cook for another 5 mins
  • Add salt pepper, ground onion and garlic cook for 2 mins
  • Blend everything to a fine paste and serve with vegetable sticks or crackers
