Soya and Chickpea Burgers

Now who doesn’t like burgers, I do love them and occasionally treat occasionally to one…lol. These vegetarian homemade ones you can have any day, yes of course they are healthy and quick to make. Make extras and freeze them for the days you can’t cook.

Full of protein soya and chickpeas, perfect for protein rich diet, eat it as a burger or with salad equally delicious.

Ingredients:

  • 40g Soya mince, soaked in hot water
  • Half a tin of chickpeas
  • 1/2 red onion
  • 2-3 green chillis
  • 1 veg stock cube
  • Hand full of coriander
  • 1 slice of Wholemeal bread

Method:

  • I used dried soya, so had to soak it. Frozen or fresh soya mince will do just fine, then you can skip this step. Soak dried soya mince in hot water for 10-15 mins, then rinse in cold water and squeeze out all the water so that it’s dry
  • In a food processor add everything and mix to make a corse paste
  • Add salt
  • Shape into burgers, leave it in fridge to rest for 1-2 hrs or more if possible
  • Bake in Oven on 200’c for 20-30mins , towards the end brush or spray oil on both sides, cook until top is crispy and brown or fry them on pan 4-5 mins each side
  • Enjoy with salad or with burger buns.
