Sweet, salty, sour, and cheesy pasta, very delicious indeed. Caramelised onions takes this pasta recipe to another level, so rich creamy and sweetness from onions makes it a very delicious and rich.


It’s healthy, vegan and vegetarian, make it even more appealing to try it. I think vegan cheese makes this pasta more creamy.

I have made this after a long time, it is one of our favourite pasta recipes.
Ingredients: (serves 4)
- 400g fresh tagliatelle pasta, or dry pasta of your choice, may need to adjust quantity
- 2 red onions
- 1 garlic clove
- 3 tbsp dark soya sauce
- 1 tbsp white vinegar
- 2 tsp sugar
- 1 tsp salt
- Black pepper
- 60g grated vegan cheese
- Handful of spinach/kale
Method:
- In a pan add onions, garlic, vinegar, Soya sauce, salt and sugar, stir so that everything is mixed well, cover and let it cook on low heat for about 15-20 mins. Keep stirring occasionally. When it’s ready onions will be soft and dark in colour
- Boil pasta as per packet instructions
- Drain pasta, retain some of the liquid about half a cup
- Now take the same pan in which you boiled pasta, add regained liquid, add cheese, keep stirring on medium heat, mix will turn thick, add kale, black pepper and cooked onions and add pasta, mix well so that pasta is well coated
- Serve hot
