Vegan Brownie Cupcakes

I am fan of dark chocolate and dark chocolate cakes. Browines are for chocolate lovers and I am of of them, a perfect mix of sweet, chocolate, crispy too and goey inside…emmm yum yum.

I have made this mix 3 times in 2 weeks that’s how much I love it and kids are loving it too.

Rather than making into traditional square cake I decided to make brownie cupcakes, so convenient to eat and pick up…no washing of hands or plates…lol win…win who is with me in this?

Ingredients:

  • 200g Dark chocolate (more than 70%cocoa)
  • 1/2 plant butter or margarine
  • 1 cup sugar
  • 1/2 cup soft brown sugar
  • 3 flaxmeal eggs (1 tbsp flaxmeal+2 tbsp water, for one egg)
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 1/2 cup plain flour
  • 1/4 cup cocoa

Method:

  • Melt chocolate and butter in a double boiler. Take pan with water up to 1 inch high, place a glass bowl on top with chocolate and margarine, keep stirring until it’s completely melted
  • Mix flaxmeal with water and keep aside
  • In a separate bowl add sugars, flax eggs add vanilla
  • Place flour, cocoa, salt in sieve and sieve in the sugar bowl mix with spatula gently
  • Add the mixture cupcake tin lines with cupcake cases, I use ice cream scooper for equal spread of the mix. Full 3/4 of the cases
  • Bake for 15-17 mins at 180’c until the top looks crispy and middle is still little wobbly
  • Let it cool on the cooling rack to completely cool down. Enjoy !
