Lemon Tart (no bake, gluten free and vegan)

So made these lemon tarts, using cupboard ingredients put together no baking no cooking make and eat, something I do when I have cravings of such kind…lol

They are delicious and tangy bit too sweet for me that’s why added some protein powder as with shop bought lemon curd it’s very sweet. But marry well with tangy ness of the lemon curd.

Ingredients: (makes 2)

  • For base:
  • 80g ground almonds
  • 1 tbsp golden agave or any syrup
  • 3 tbsp almond butter
  • Filling:
  • 6 tbsp (approx 80g) lemon curd
  • 3 tbsp protein powder or any malt powder optional
  • 2 tsp arrowroot powder

Method:

▪️mix base ingredients spray oil in tart tins, spread mix evenly and press all around well

▪️mix filling ingredients pour over almond base

▪️freeze for 30-40mins to firm it, leave it to stand for 5 mins before serving
