Pakora Fritters

Ingredients: (7-8)

  • 80g Gram flour
  • 2 tbsp cornmeal flour
  • 1 big potato
  • 1 red onion
  • 2-3 green chillis
  • 2 tbsp coriander chopped
  • 200g broccoli, diced
  • Salt to taste
  • 1 tbsp cumin powder
  • 1 tbsp garam masala
  • 1 tbsp dried fenugreek leaves, optional

Method:

  • Pierce potato and cook in microwave for 2 mins, then slice in small pieces
  • In a bowl, add gram flour, cornmeal, all the spices, mix well
  • Add all the vegs mix with hand, add little water to bind, just add little water at a time, mix should be dry ish and should come together when you press the small amount in between your palms
  • You can either deep fry them or pan fry them. I pan fried them, spray little oil on pan, cook one side 5-6mins on low heat then flip and cook for 5-6 mins on other side
  • Enjoy with salsa, ketchup or sauce of your choice x
