Another quick and easy recipe with tofu. Tofu is so versatile and can be added to anything as has no taste of it own. This time I cooked it with Kala chana, no much fussing about in this recipe, very simple and only few cupboard ingredients, just the way I prefer.

Kala chana and tofu are full of nutrition, cannot be a better combo. Taste amazing and ready in no time. Check out the recipe below and leave a comment if you like it x


Ingredients: (1 serving)
- 1/2 a red onion, finely chopped
- 1 garlic clove, finely chopped
- 1 green chilli, finely chopped
- 80g chopped tomatoes, I used tin tomatoes
- 1/2 tsp cumin seeds
- 1/2 tsp Coriander powder
- 1/2 tsp chana masala or garam masala
- 3 tbsp Kala chana from tin
- 100g plain tofu
- Salt to taste
- coriander and lemon juice to finish
Method:
- In a pan, heat up some oil, add cumin, when it starts to sizzle add onion and garlic cook until light golden, add chilli and tomatoes cook until tomatoes are done for about 5 mins, keep stirring
- Add salt, coriander powder, masala cook for 30 secs add tofu and chickpeas, mix well add 200ml water, leave to simmer for about 5 mins
- Check the consistency if it’s too thick add little or if it’s too thin leave it cook for bit longer
- To finish add a tbsp of lemon juice and coriander and enjoy!
