Soya cooked in spinach basically like chicken saag or paneer saag, but used soya chunks.

Spinach is one of our family favourite, we eat it in many forms, this time it’s with soya chunks. Soya chunks are another of my go to for vegetarian protein, it can be used in many ways. It’s a very good meat alternative as it soaks up the flavour really well.

Ingredients:
- 500g puréed spinach(frozen, tin or fresh)I used frozen
- 100g dried soya
- 1 medium onion
- 2-3 garlic cloves
- 1 tbsp ginger
- 1-2 green chillis
- 1/2 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1 tsp turmeric powder
- 2 tsp garam masala
- Salt to taste
Method:
- Boil soya chunks in water for 5 mins until they are soft, rinse in water, squeeze out the excess water, keep it aside
- If using frozen spinach, thaw in microwave and purée in food processor. If using fresh you might need to add more, add hot water to the spinach then purée
- In a pan add little oil, when oil is hot add coriander seeds and cumin and half garlic clove finely chopped, when they start to splatter, add onions, fry until dark golden, add finely chopped garlic, ginger and chilli, cook until garlic and ginger for brownish
- Add salt, turmeric and garam masala cook for 30secs
- Add puréed spinach and soya, might need to add little water depending on which spinach you have used.
- It will help to press soya chunks with spatula so that it soaks up the flavour couple of time during the whole cooking
- Let it cook on low heat for 15-20mins keep stirring occasionally, do not cover otherwise spinach will lose its colour.
