Lemon and Blueberry Squares

Lemon and blueberries go really well together, do you agree? I love this flavour combo, was dreaming about this for a long time…lol…finally decided to make a quick and easy no bake recipe. It happens to be gluten free, vegetarian and vegan.

It’s super easy, only 5 ingredients and quick too, so perfect for that sudden sweet attacks. These squares are so moorish I ate 2 just after finishing photographing them…lol. I think they can do with more blueberries on the top, but still a good treat. Check out the recipe below and please let me know your thoughts x

Ingredients: (6)

  • Lemon base
  • 180g oats flour
  • 100g lemon curd
  • For blueberry layer
  • 100g blueberries frozen or fresh
  • 1 tbsp icing sugar
  • 1 tbsp arrowroot

Method:

  • Mix ingredients of lemon base, line a tin with baking sheet, spread mix evenly
  • In a pan add blueberries with arrowroot let it boil, keep stirring then turn the heat off and let it cool completely
  • Add over lemon base, leave it in fridge to set for 1 hr atleast or freeze for 30mins
  • Cut into squares and enjoy
