Love coffee love cupcakes, why not make coffee cupcakes …great right! I made them with Wholemeal flour, turned out fine and good balance of sugar and frosting was just perfect.
I like baking and love eating Home baked things, that’s my ultimate guilty pleasure, what’s yours? I find baking soothing, relaxing and highly satisfying. I always experimenting and coming up with new ideas to bake and make it healthier as possible for myself.
This recipe is an experiment, which tuned out good enough for sharing…although it is healthier version it is still enough for my sweet cravings, but everyone is different.

Ingredients: (makes 4-5)
- 1/2 cup Wholemeal flour
- 1/3 cup sugar
- 1/4 cup plant butter, room temperature
- 1 small egg
- 1/2 tsp baking powder
- 2 tsp instant coffee, diluted in 1 tsp water
- pinch of salt
- Chocolate frosting
- 45g dark chocolate
- 3 tbsp plant yogurt
Method:
- In a bowl add flour, baking powder and salt, mix with whisk
- Take a separate bowl, add butter and sugar using hand mixer or whisk, beat until light and fluffy
- Add egg, beat until well incorporated, beat for couple of mins until mixture is bubbly and full of air
- Add flour mix little by little mix using spatula, do not over mix it
- Take a muffin tray lined with cupcake cases, add mix to the cases only filling 1/3
- Bake at preheated oven at 180’c for 15-18mins, until skewer inserted and comes out clean..
- Take the cupcakes off the tin and leave them to cool completely on rack
- Meanwhile prepare frosting, melt chocolate in microwave, start with 40 secs the keep adding 10 secs until chocolate just melt
- Stir so the chocolate is melted and smooth, add yogurt mix well, add the frosting to the cupcakes
