Peanut butter Banana Oats Breakfast Muffins

Wondered if you could have muffins for breakfast, I have so many times…lol I have crated this recipe of healthy breakfast muffins than you can enjoy without any guilt. All the healthy ingredients, sugar free, gluten free and dairy free. These turned out absolutely fluffy, moist and delicious. Sounds amazing right, why not check out below how to make them.

I have used crunchy peanut butter, which added to the texture too, but smooth one will do just as fine. I have used sweetener in this recipe, although if you want to add real sugar you can I just want to save my sugar for my teas and coffees 🙂

Ingredients: (makes 5)

  • 80g rolled oats
  • 1 egg
  • 4 tbsp peanut butter
  • 1 tsp vanilla essence, optional
  • 1 banana
  • 1 tbsp sweetener
  • 1 tsp baking powder
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • Pinch of salt

Method:

  • Add egg and sweetener to a bowl, beat with electric mixer until light and fluffy, start on slow setting then turning it up and beat for about 1 min
  • Add peanut butter and vanilla, mix until well incorporate
  • Add all the fry ingredients in a separate bowl mix well then pour over wet ingredients, mix with spatula
  • Pour on to cup cake tray lined with cupcake cases
  • Top with some seeds
  • Bake for 15-20 mins at 180’c until skewer inserted comes out clean.
