I have made and eaten courgette cakes many times, always loved how soft they always turn out. Sunday mood was to have something like that but bit of chocolate too, so combine the two and what you get Chocolate filled Courgette Cakes…I like to experiment with food and flavours, I am not afraid of failing…lol
But I didn’t fail today, these cakes turned out as expected moist and soft and melting chocolate was just to die for, don’t take my words for it, try for yourselves :).

They will make a great snack and healthy one too. But I had them in breakfast, instead of pancakes, like usually have on sunday morning.
Ingredients:
(makes 3 cakes, double up the ingredients to make more)
- 40 g Oats flour
- 2 tbsp/20 g of grated courgette (water squeezed)
- 1 tbsp maple syrup
- 1 tbsp sugar of your choice (add more sugar if you like with sweeter)
- 1 tsp vanilla extract
- 1/2 of beaten egg
- 20 g dark chocolate chunks
- Pinch of baking powder and baking soda
Method:
- mix all the ingredients well
- if the mix is dry add some milk
- pour 1 tbsp of mix over cake moulds or muffin cases , then place a piece of chocolate and add another 1 tbsp of mix on top, grate some chocolate over it
- bake for 180’c for 8-10 mins
