Pasta in Spinach Sauce

Pasta in yummy spinach sauce, an another variation on pasta sauce. Sauce made of spinach and broccoli, I used frozen which makes this recipe little simple and quick. It’s full of fibre and healthy, moreover it taste great. it’s very healthy dish, with green vegetables.

Its a hit at our house, my children loves it. They don’t know that they are eating broccoli lol. They love spinach so this dish is popular with them.

Pasta is great comfort food, have it warm or cold it’s equally delicious. I like to make both kind of pastas Wholemeal or white, but family favourite is white so that wins most of the times hehe.

Ingredients: (2 servings)

  • g Pasta
  • g frozen spinach
  • g frozen broccoli
  • 1 small onion, finely chopped
  • 1 garlic clove, finely sliced
  • 1 tsp garlic granuals
  • 40g cheddar grated
  • Salt to taste
  • 2 salmon fillets
  • 1 tbsp olive oil, salt and pepper, 1/2 tbsp lemon juice

Method:

  • Boil pasta as per packet instructions
  • Heat a pan add oil, when the oil is hot add garlic when it turns slightly golden add onions and cook until they are translucent
  • In a food processor purée thawed spinach and broccoli
  • Add spinach mix to the pan and cook on gentle heat for about 15 mins
  • Add drained pasta, mix well. Cook for 5 mins
  • Add cheddar and season accordingly
  • Coat salmon with olive oil, salt pepper and lemon juice. Either you can pan fry then or bake them. I baked mine.
  • Serve hot and enjoy !
