This dish is so delicious but very easy and quick to make. Tangy lemon rice with roasted peanuts and cashews, a wonderful combination of flavours. And it so easy to make and ready in no time. Something differ to try what do you say.

Ingredients:
- 1 cup Basmati Rice, soaked
- 1 tsp mustard seeds
- 1 1/2 tsp cumin seeds
- 1 1/2 tsp turmeric powder
- 3 tbsp lemon juice
- 2 tbsp peanuts with skin
- 1 1/2 tbsp cashews
- Salt to taste
Method:
- Cook rice, I use draining method, where you add plenty of water to rice and drain the ingredients excess water once rice are cooked. I recommend Soaking rice prior to cooking, it reduces the cooking time as well as rice taste better
- In a pan heat some oil, add mustard and cumin seeds, when seeds starts to splatter add salt and turmeric cook for 30 secs
- Add boiled rice, mix well
- Add lemon juice, mix well
- Turn off the heat and cover and leave it to rest for few minutes
- In a separate pan add little oil, add peanuts and cashews keep stirring on a medium heat for 4-5 mins until they starts to get little brown from the edges
- Add the peanuts and cashews to rice
- Serve and enjoy
