Another pasta recipe, basically oil free, with hidden veg so kids can enjoy it too. Easy and healthy lunch or dinner idea. Check out below hot to make it.


Ingredients: (2 servings)
- 2 portions of spaghetti
- 200g lean mince beef
- 1/2 onion, finely chopped
- Hand full parsley
- 1 garlic clove
- 1/2 tin of tomatoes, puréed in a food processor
- 100g spinach, I used frozen 2 blocks
- 50g leek, thinly sliced
- 1 tbsp soya sauce
- 1 tbsp red wine vinegar
- 1 tbsp garam/meat masala
- Salt to taste
- 1 green chilli or red chilli
Method:
- Put spaghetti to cook as per packet instructions
- In a pan, add puréed tomatoes, garlic, puréed spinach, leek, chilli, sauces and masala add 200ml water, cook on low heat for about 20mins stirring occasionally
- In a bowl mix mince, onion and parsley, shape them in small balls, in a pan with little oil cook them so that they are sealed from all sides by rotating after few seconds
- Add meatballs to tomato sauce cook for another 10 mins then add drained spaghetti cover, turn off the heat and leave for 5 mins
