For breakfast or for lunch it’s a great choice. Cooks quick and tasty, something different to try.
Don’t you get bored eating same thing again and again, I certainly do. So like to experiment with my food, if I am honest maximum times it all works. What I cook is what I am craving that day, something spicy, tangy or sweet or sour, go with my instincts and create a dish.

Rosti is great, but I added couple of more ingredients to make it in a different way, which was amazing with eggs or sauce if you fancy.
Most important part of making Rosti is potatoes, you grate them and squeeze the life out of them..lol any moisture in them will make them soggy and floppy. Best to put grated potatoes on a tea towel and squeeze the water out. You can also add grated carrots if you wish.

Ingredients:
- 1 large potato
- 1/2 red onion
- 1 green chilli
- 2 tbsp coriander
- 2 tbsp gram flour
- 1/8 tsp carom seeds
- Salt to taste
Method:
- Grate potato, put them on a tea towel or kitchen towel and squeeze out all the water
- Add rest of the ingredients mix well, squeeze the mix so all come together
- Divide in 4 parts roll and flatten
- Take a pan, add oil or spray, add flattened rostti, cook for 4-6 mins both sides on low heat
- Serve hot
