Quick and easy side dish, but delicious just the way I like it. Goes well with flat bread, paranthas or rice.

Ingredients: (serves 2)
- 2 medium potatoes
- 100g frozen garden peas
- 2 garlic clove, finely chopped
- 1 cm ginger finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric
- Salt to taste
- 2 green chillis
- Hand full of coriander
- a block of frozen fenugreek leaves or methi, optional or use spinach leaves
Method:
- Take a pan, add or spray oil, add cumin, mustard seeds, when they start to splatter add ginger garlic, keep stirring until golden
- Add coriander powder, salt and turmeric fry for 30 secs then add chillis fry for 30 secs then add diced potatoes, peas and fenugreek mix well and cover to cook on low heat, keep stirring occasionally
- Depending on potatoes used it will take about 15-25 mins to cook. The garnish with coriander
