Aubergine and Okra wasn’t always my favorites as a child. My mum always made yummy fried aubergines and okras but I never was keen, but these had grown on me, ever since I started cooking myself hehe. There are so many varieties you can do with them.
Being a working mum I struggle to get time for time consuming recipes, I like to keep it simple, quick and of course healthy. I am also trying to shed some extra pounds I have gained over the years so like to keep my recipes fat and sugar free and low carb. Sorry for boosting but I never ever had this much affect of diet on my weight expect when I was under 25, it was so much easier then lol
Ok, so back to this dish..it’s everything you need to make meal interesting and different. It’s spicy and tangy, has vegetables and it’s healthy…win…win right! So check out the recipes below, only need few cupboards ingredients. It’s so quick and prep is just nothing, ideal for quick weekday dinner.

Okra is low calorie vegetable, it is rich in potassium, vitamin B, vitamin C, folic acid and calcium. Same as okra aubergine has lots of health properties,it is rich in antioxidants and can provide at least 5% of a person’s daily requirement of fiber, copper, manganese, B-6, and thiamine(info off the web). It also contains other vitamins and minerals. So there is more excuse to include them in our diet.

Ingredients:
- 2 baby aubergines
- 8-10 okras
for paste:
- 1 tbsp tamrind paste
- 2 tsp cumin powder
- 2 tsp coriander powder
- 2 tbsp red chilli powder, add less if you prefer less spicy
- 1 tsp ground garlic
- Salt to taste
Method:

- Mix all the indgredients for paste
- cut the aubergines in 4 sections and okra in half but keeping the head attached
- coat the inside of the veg and leave to marinate for 30 mins
- spray/add oil to a pan, fry aubergine and okra until soft and cooked
