Soya Mince with Roasted Potatoes

My favourite and most loved way of cooking, one pot, add all in and let it cook or slow cooker it, takes great and minimal effort.

Take any type of mince for this recipe, but if are preferring vegetarian today then this will be perfect for busy weekday meals.

I have added kale to it, lots of vegetables can be added to it like courgette, spinach or leek as well.

Baked potatoes went really well with it, can be serviced with bread or rice.

Ingredients:(serves 2)

  • 100g soya mince, soaked in hot water for about 10-15 mins
  • 1 small onion, finely chopped
  • 1 tbsp ginger garlic paste
  • 100g kidney beans from tin
  • hand full kale, optional
  • 300g passata, or tin tomatoes purĆ©ed
  • 400ml water
  • Salt and pepper to taste
  • 1 tbsp meat masala or garam masala
  • couple of baby potatoes

Method:

  • Take a deep pan, add all the ingredients other than potatoes
  • let it boil then add turn down the heat cover and cook on low heat for 30 mins, stirring occasionally
  • Meanwhile prick potatoes, bake in oven for about 40mins on 180’c
  • Check the mince of it’s too liquidy let it cook more on medium heat or turn of the heat
