Flapjacks are my favourite, always loved eating them and making at home. They are very easy to make and doesn’t need too many ingredients. Oats with syrup and butter makes a soft butter texture, such a delight.

However I haven’t made traditional flapjack today, it’s a quick easy non bake version, packed with protein. Sticking to no cooking no baking dessert week this is my second attempt to make something indulgent but still healthy.
This Protein Flapjack bars are made with rolled oats, maple syrup, coconut oil, flaxseed, dates and cashews, topped with dark chocolate. It’s a easy recipe which you can make your own, adding your own favourite protein, can swap the dark chocolate with white or milk chocolate.

It’s full of nutrition, you can easily pass this as breakfast bars, with coffee lol why not try them.
Ingredients: (makes 4)
- 40g rolled oats
- 1 tbsp milled flaxseed powder
- 1 tbsp coconut oil or almond butter
- 3 tbsp maple syrup or any other liquid sugar like honey or agave
- 20g melted dark chocolate
- Handful of chopped cashews
- 4-5 medjool dates

Method:
- Mix oats, maple syrup, flaxseeds and coconut oil
- Line a tin and spread the mix evenly making thick layer, press down to set
- Spread chopped cashew and dates evenly on the oats
- Spread melted chocolate on top making a light layer
- Leave in the fridge for 30 mins to set
- Cut in pieces and drizzle some more chocolate if you like and enjoy !
